    Spinach and Salmon Roll

    Servings: 8 to 10
    Preparation: 15 minutes
    Baking time: 20 minutes

    Ingredients:

  • 2 pounds frozen spinach
  • 6 large eggs
  • 1 Boursin cheese (garlic & herbs)
  • 8 slices of smoked salmon
  • Two tablespoons of fresh or frozen chives
  • Directions:

    Thaw spinach and drain,

    Preheat oven to 350° F,

    Butter a rectangular baking dish (approximately 13 1/2 x 8 3/4 inches),

    Beat eggs with the chives and salt and add the spinach,

    Pour egg and spinach mixture in the rectangular baking dish and cover with a cooking sheet (parchment paper),

    Bake for 20 minutes at 350° F (the spinach preparation is ready when it doesn’t stick to the baking dish anymore),

    Let cool a little and spread the Boursin cheese over the spinach preparation bed,

    Place the salmon fillets over the Boursin cheese With the bed of spinach outside keeping the salmon inside,

    Roll the preparation lengthwise and wrap it with some plastic wrap,

    Refrigerate before serving.

    You can serve it with a tablespoon of sauce prepared with:

    ½ cup sour cream

    ½ cup cream cheese

    2 teaspoon chives

    1 pinch of salt and pepper
