Ingredients:
1/2 bottle of French wine
1 onion
1 Tablespoon of butter
1 beef bouillon cube
1 square (1 ounce) of dark semi sweetened chocolate
1 teaspoon of flour
1 Tablespoon of Cognac
Directions:
Cut the onions into small pieces and saute in a pan with the butter for 3-4 minutes without allowing them to brown.
Add the wine and beef bouillon cube and cook on medium heat for 15 minutes. Salt and pepper to taste. Add the chocolate
square at the end of the cooking time.
Place the mixture in a bowl and beat with an electric mixer for 2-3 minutes, to obtain a smooth sauce. Return mixture to
the pan.
Dilute the flour in 3 Tablespoons of water in a bowl, mixing with a whip to avoid lumps. Add this mixture to the wine sauce
and reheat on low for 2-3 minutes until the sauce thickens.
Add the Cognac, stirring and keeping the sauce warm to serve with any red meat.
