    Stuffed Zucchini

    Servings: 6
    Preparation and cooking time: 45 minutes

    Ingredients:

  • 3 medium sized zucchinis
  • 1 onion
  • 2 cups (1/2 lb) mushrooms
  • 1 cup (1 lb) ham pieces
  • 1 egg
  • 2 Tablespoons olive oil
  • 2 Tablespoons heavy cream
  • Salt and pepper to taste, and 2 pinches of nutmeg powder
  • Directions:

    Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).

    Rinse the zucchinis and cut them in two, lengthwise.

    Partially remove some of the flesh with a teaspoon and place in a mixing bowl.

    Place the halved zucchinis in a greased dish, which has been filled with 1 cup of water. Put in the oven for 15 minutes.

    Add the cut up onion, mushrooms and ham to the mixing bowl. Mince the ingredients coarsely together.

    Heat the 2 tablespoons of olive oil in a frying pan and cook the mixture over medium heat for 10 minutes, stirring frequently. Add the salt, pepper and nutmeg. Near the end of the cooking time, add the mixture of egg and cream and blend well.

    Remove the zucchinis from the oven. Garnish generously with the mixture. Return them to the oven for 30 minutes.

    Serve hot.
