    Leek Tart

    Servings: 6
    Preparation and cooking time: 50 minutes

    Ingredients:

  • One Pie pastry crust
  • 4 fresh or frozen leeks cut into slices
  • 4 onions
  • 4 oz cubed bacon pieces
  • 2 oz butter
  • 1 Tablespoon flour
  • 3 Tablespoons olive oil
  • 1 pint of milk
  • salt, pepper, nutmeg, grated Swiss cheese
  • Directions:

    Preheat oven to 400 degrees Fahrenheit (210 degrees Celsius).

    Cook the sliced leeks (use the white part of the leek) in the butter for 15 minutes. At the same time, in other pan, heat the olive oil and cook the onions and bacon pieces without browning them.

    Add the salt, pepper, and 1/2 teaspoon nutmeg to the leeks. Sift the flour onto the leeks and add the milk, stirring to obtain a creamy mixture.

    Place the pie crust into a buttered pie baking dish, spread the onions and bacon pieces on the bottom then add the leek mixture.

    Sprinkle with grated Swiss cheese.

    Cook in the oven for 30 minutes.

    Serve warm with a green salad.
