    Salmon Terrine

    Servings: 8
    Preparation and cooking time: One hour

    Ingredients:

  • 700 grams of salmon filet (1.5lbs)
  • 1 large carrot
  • 100 grams of green beans (approximately 3 ounces, or 1/2 cup)
  • 3 slices of sandwich bread
  • 3/4 cup of heavy cream
  • 3 eggs, beaten
  • juice from 1/2 lemon
  • chives or parsley
  • salt and pepper


  • Directions:

    Heat oven to 400 degrees Fahrenheit.
    Cut carrot in long thin sticks and boil 10 minutes in salted water.
    Cut green beans into small pieces and also boil 10 minutes in salted water.
    Cook salmon filet in boiling water for 10 minutes, then crumble into a bowl, avoiding any bones.
    Add cream, eggs, lemon juice, sandwich bread in pieces, chives or parsley, salt and pepper and mix thoroughly.
    Grease a baking dish 4.5" X 8.5" (loaf pan style) with olive oil.
    Place a layer (1/3) of the salmon mixture on the bottom of the plate.
    Spread the pieces of green beans on top, followed by another 1/3 of the salmon.
    Then add the carrots and finish with the last 1/3 of the salmon.

    Place in 400 degree oven for 45 minutes.

    Wait until the terrine has cooled before cutting into small wedges.
    Place a wedge or two on a piece of lettuce and serve with mayonnaise.
