    French Onion Soup
    from Clarisse Gaubil


    Servings: 6
    Preparation time: 10 minutes
    Cooking Time: 30 minutes

    Ingredients

    For the soup:
  • 1 lb. of Onions
  • 1/4 Cup (2 oz) of Butter - 4 tablespoons
  • 1 Tablespoon of Flour
  • 6 Cups (48 fl. oz) of Water
  • 1 Teaspoon of Salt
  • 1/4 Teaspoon of Pepper
  • To serve

  • 6 Slices of French or White Bread

  • 1 Cup Shredded (3 oz) of Gruyere or Swiss Cheese
  • Directions:

    Peel onions and cut into thin slices.
    In large saucepan, melt butter and add onions.
    Cook over medium-low heat for 10 minutes until golden brown, stirring occasionally.
    Sprinkle with flour and stir until mixture gets lightly brown.
    Add water, salt and pepper.
    Bring to a boil over high heat and simmer for 20 minutes.
    Pour into soup bowl, sprinkle with swiss cheese.
    Place under broiler and broil until cheese is bubbly and golden brown.
    Toasted bread may be either put into the soup bowl before the cheese or serve separately.
